Chef Margarito Machado of Carmelo's Ristorante in Austin won the "Best of Beef" Chef's Challenge conducted by the Texas Beef Council. His Filetto Fidel was a beef filet accompanied by roasted vegetables and béarnaise sauce. Carmelo's celebrates its 20th anniversary in Austin this fall.
